For those if you who need some Sunday treat inspiration ✨ how about Tropical Coconut Strawberry Tarts? ✨

90g all purpose flour
10g coconut flour
1 tbsp powdered coconut sugar (blended coconut sugar)
6 tbsp ice cold water
1 1/2 tsp hard coconut oil
Method: Start by adding the dry ingredients into a food processor. Then add the coconut oil and pulse until well combined. While the food processor is processing, add step by step the water. As soon as it crumbles and sticks well together, knead for a second, wrap in plastic wrap and let cool down in fridge.
125g creamy coconut yoghurt
2 tsp maple syrup
Zest of one middle sized lemon
1 tsp vanilla
Extras: strawberries, passion fruit, left over lemon zest
Method: Preheat oven to 170 degrees (C). In a small bowl, whisk everything together. Set aside.
Now, take out the dough and knead again for 2-3 minutes. Halve the dough and press into small tart molds. Let bake in the oven for around 10 minutes or until golden brown.
Note: if the dough starts raising while baking, let the air out by making a tiny whole with a tooth pick. As soon as the crusts are ready, let them cool down a bit. In the meantime, slice some strawberries, open one passion fruit and blend up 1 strawberry with a splash of water. Set aside. Take the crusts and fill them with the coconut filling. Top with sliced strawberries, strawberry 'smoothie' and passion fruit. Enjoy!
